This Italian recipe is made with pantry staples, making it an easy last-minute dish.

COOK TIME: 15 Minutes
Ingredients

3 to 4 (1 pound) Gold'n Plump Skinless Chicken Breasts
1 tablespoon olive oil
6 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (14-1/2 ounces) Italian-style tomatoes with oregano, basil and garlic
1 can (4 ounces) mushrooms, drained

Directions
Step 1  Step 1:
Place chicken breasts between 2 sheets of plastic wrap or in a plastic bag. Using a rolling pin or other flat object, flatten chicken to a 1/2-inch uniform thickness.
 
Step 2  Step 2:
Heat oil in a large skillet over medium-high heat. Stir in garlic.
 
Step 3  Step 3:
Add chicken and sprinkle with salt and pepper. Cook about 4 minutes. Turn chicken.
 
Step 4  Step 4:
Stir in tomatoes (with juice) and mushrooms. Continue cooking for 4 to 6 minutes or until flavors are blended and chicken is thoroughly cooked.
 
Step 5  Variations:
3 teaspoons jarred minced garlic may be used in place of minced fresh garlic.
